- ◾ 독일 주요 냉동식품기업인 프로스타社(Frosta, 이하 프로스타)는 최근 수산물 원료를 사용하지 않는 피시프리 피시핑거(fish-free fish finger)를 출시하였음
- 피시핑거는 명태, 블루화이팅 등 흰살생선류에 빵가루를 입힌 가공식품으로 유럽 내 인기가 많음
- 동 社는 독일 내 반(半)채식주의자(flexitarian) 시장이 성장할 것으로 전망하여 이들 수요에 부합하는 축산 및 수산물 대체 원료를 활용한 가공식품을 개발 중임
- 피시프리 피시핑거는 잭푸르트(jackfruit), 콩, 아마기름(flaxseed oil) 등을 조합하여 육질을 제조하고, 이를 전통 피시핑거에 사용되는 빵가루로 둘러싼 제품임
- 그 중 잭푸르트를 제외하고는 모두 자국에서 생산된 원료임
◾ 인플레이션에 따라 독일 내 수산물 소비가 감소하는 상황에서 이들 축산 및 수산물 대체 원료를 사용한 가공 식품에 대한 수요가 성장세에 있음
- 이들 가공식품에 대한 수요가 증가하는 가운데 유럽과 영국 시장에 피시핑거를 공급하는 주요 기업인 Birds Eye, Nomad Foods(Iglo Parent社의 자회사), Sofina(Young’s Seafood社 자회사)도 잇달아 해당 식품군을 출시함
